Jefferson listed "tansey" among the "Objects for the garden this year" in 1794. It is not known exactly how it was utilized at Monticello, but its bitter, aromatic leaves were frequently used for flavoring, especially in puddings and omelets. Tansy is a native of Europe but is now common across North America.
