Jefferson noted including hyssop in his 1794 list of "Objects for the garden this year." Hyssop, an evergreen bushy herb, is alluded to in the Bible and has been cultivated for its medicinal and culinary value since ancient Greece. However, because of its weak aroma and bitter taste, it is not as widely used as a spice as it once was.
